Create an index as you go
Number pages when that suits the book and reserve a few pages for an index. Record a subject and page number after a drawing session.
Use simple categories you will remember: plants, rooms, lettering or a particular project. Leave room to add references rather than trying to predict every category.
When the book is full, add a short note about the materials used and the period it covers. The index turns a collection of pages into a useful reference.
